The owner showed us where they smoke/cook the meat.  They begin early in the am with a wood fire in this oven and it's usually done about 11 am, when they begin selling.  We got there at about 2 and the cook just barely managed to scrape a few morsels of brisket and a half a chicken together for us, making our grand total, lunch for 2 with drinks and side orders $6.75.  This place was the greatest!!
