The other part of Susan's birthday (oops - following post!) is that our incredible chef/guide Linda made her her request dinner which was Pad Thai, accompanied by amazingly authentic tasting Thai slaw and fresh fruit salad.  We are eating like queens at Linda's hand, and she does it all in the back half of this trailer (the other half housing our luggage, a huge fully stocked cold drink cooler, our traveling library, bike cleaning and maintenance equipment our white plastic dining room outdoor chairs and some food storage).  Her kitchen has a couple of gaz burners so she does a lot of dutch oven cooking.  This involves building a charcoal fire in a small Weber grill, then transferring the hot coals to a cookie sheet, placing the pot over the coals and putting additional coals on the lid to create the oven effect.  It bakes at about 350 degrees and takes roughly the same amount of time to cook as a regular oven does.  On one of the other birthdays, she made a gluten free chocolate cake using this method which was yummy.  Having Linda as our chef is one of the very best things about the trip.
